{"id":1079,"date":"2011-04-20T09:40:30","date_gmt":"2011-04-20T14:40:30","guid":{"rendered":"http:\/\/foodiecuisine.com\/wordpress\/?p=1079"},"modified":"2011-04-20T09:40:30","modified_gmt":"2011-04-20T14:40:30","slug":"recent-cooking-adventures-april-18-2011","status":"publish","type":"post","link":"http:\/\/foodiecuisine.com\/wordpress\/general\/recent-cooking-adventures-april-18-2011\/","title":{"rendered":"Recent Cooking Adventures &#8211; April 18, 2011"},"content":{"rendered":"<h4>By Todd Barron @ FoodieCuisine.com<\/h4>\n<p>I cook most of the meals at home and enjoy cooking several times per week.\u00a0 The primary challenge lies in cooking food that tastes good AND is healthy.\u00a0 I forego this requirement on the weekends, but most of the items that follow are low in calories, but have great flavor.\u00a0 Read on and maybe you will get some ideas for your own experiments.\u00a0 Enjoy!<\/p>\n<div id=\"attachment_1082\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/fish1.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1082\" class=\"size-medium wp-image-1082\" title=\"fish1\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/fish1-300x189.jpg\" alt=\"\" width=\"300\" height=\"189\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/fish1-300x189.jpg 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/fish1.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1082\" class=\"wp-caption-text\">Sea Bass, Potatoes, Marinara Sauce, Asparagus<\/p><\/div>\n<p>I use my griddle to cook the sea-bass, and season it\u00a0with salt and pepper.\u00a0 The potatoes are made by cooking two russet potatoes, mashing them, and incorporating buttermilk and Parmesan cheese.\u00a0 I use a little amount of butter for texture and season with salt and pepper.\u00a0 The marinara sauce is homemade as I blend San Mateo tomatoes (24 oz can,) and cook with scallions, garlic, red pepper, salt, pepper, and a small amount of olive oil.\u00a0 Fresh basil is incorporated at the end, and the fish is topped with a fresh slice of lemon.\u00a0 The asparagus is something I frequently make, which is fresh asparagus, trimmed, topped with olive oil, salt and pepper, and baked in the oven at 425 degrees for 25 minutes.<\/p>\n<div id=\"attachment_1083\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/med_pork_pasta.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1083\" class=\"size-medium wp-image-1083\" title=\"med_pork_pasta\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/med_pork_pasta-300x179.jpg\" alt=\"\" width=\"300\" height=\"179\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/med_pork_pasta-300x179.jpg 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/04\/med_pork_pasta.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1083\" class=\"wp-caption-text\">Grilled Pork, Angel Hair Pasta, Salad<\/p><\/div>\n<p>Pork loin, when trimmed properly, has the same amount of calories as chicken, and sometimes is lower in calories (depending on the chicken you buy.) In this dish the pork loin is trimmed, sliced thinly, and pounded into cutlets. I season it with salt and pepper, and cook on my griddle until lightly browned and cooked through. The angel hair pasta, whole grain, is cooked al dente, and tossed with sliced Kalamata olives, roasted garlic, scallions, pappadew peppers, and olive oil.
