You cannot beat food which is healthy and low in calories.  Enjoy!<\/p><\/div><\/div><p id=\"zlrecipe-ingredients\" class=\"h-4 strong\">Ingredients<\/p><ul id=\"zlrecipe-ingredients-list\"><li id=\"zlrecipe-ingredient-0\" class=\"ingredient\" itemprop=\"ingredients\">2 Pounds flounder filets\r<\/li><li id=\"zlrecipe-ingredient-1\" class=\"ingredient\" itemprop=\"ingredients\">24 Corn tortillas\r<\/li><li id=\"zlrecipe-ingredient-2\" class=\"ingredient\" itemprop=\"ingredients\">6 Tablespoons light sour cream\r<\/li><li id=\"zlrecipe-ingredient-3\" class=\"ingredient\" itemprop=\"ingredients\">6 Tablespoons salsa\r<\/li><li id=\"zlrecipe-ingredient-4\" class=\"ingredient\" itemprop=\"ingredients\">3 Large limes\r<\/li><li id=\"zlrecipe-ingredient-5\" class=\"ingredient\" itemprop=\"ingredients\">1 Bunch cilantro\r<\/li><li id=\"zlrecipe-ingredient-6\" class=\"ingredient\" itemprop=\"ingredients\">1 Tablespoon extra virgin olive oil\r<\/li><li id=\"zlrecipe-ingredient-7\" class=\"ingredient\" itemprop=\"ingredients\">1 Tablespoon butter\r<\/li><li id=\"zlrecipe-ingredient-8\" class=\"ingredient\" itemprop=\"ingredients\">2 Tablespoons Cajun spice (premade)<\/li><\/ul><p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p><ol id=\"zlrecipe-instructions-list\" class=\"instructions\"><div id=\"zlrecipe-instruction-0\" class=\"instruction-label\" >Prep\r<\/div><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Peel the carrots.  \r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Cut the core out of the cabbage.  \r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Trim the ends of the green onions.  \r<\/li><li id=\"zlrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Remove the stem and seed the jalapenos.  \r<\/li><li id=\"zlrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Wash the limes.\r<\/li><div id=\"zlrecipe-instruction-6\" class=\"instruction-label\" >Combine\r<\/div><li id=\"zlrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">Use your food processor and attach the slicing blade.  If you do not have a food processor, julienne the following.  Shred the cabbage, carrot, green onions, and jalapenos in the processor.  Stop the motor and add the olive oil, vinegar, and mustard.\r<\/li><li id=\"zlrecipe-instruction-8\" class=\"instruction\" itemprop=\"recipeInstructions\">Zest the limes and juice them over the mixture, and then add the salt and pepper.\r<\/li><li id=\"zlrecipe-instruction-9\" class=\"instruction\" itemprop=\"recipeInstructions\">Pulse several times until everything is incorporated.  Let sit for 30 minutes.  This allows the lime juice and vinegar to \"cook\" the slaw.\r<\/li><div id=\"zlrecipe-instruction-10\" class=\"instruction-label\" >Fish\r<\/div><li id=\"zlrecipe-instruction-11\" class=\"instruction\" itemprop=\"recipeInstructions\">Wash the flounder and remove any bones.  Wash the limes and cut into quarters.  Wash and break the stems off the cilantro.  Chop the cilantro.\r<\/li><li id=\"zlrecipe-instruction-12\" class=\"instruction\" itemprop=\"recipeInstructions\">Sprinkle the fish generously on both sides.  2 pounds should be about 4 large filets worth.\r<\/li><li id=\"zlrecipe-instruction-13\" class=\"instruction\" itemprop=\"recipeInstructions\">Heat your griddle to 400 degrees.  Add the olive oil and butter to the griddle once hot.\r<\/li><li id=\"zlrecipe-instruction-14\" class=\"instruction\" itemprop=\"recipeInstructions\">Once the butter has melted add the fish to the griddle.  <span class=\"bold\">Note<\/span> You may have to do this in batches if you pan or griddle is too small.\r<\/li><li id=\"zlrecipe-instruction-15\" class=\"instruction\" itemprop=\"recipeInstructions\">Let the fish brown before flipping over.  It should take about 5 minutes for the first side and 2 minutes on the second.  Do not flip it more than once.\r<\/li><li id=\"zlrecipe-instruction-16\" class=\"instruction\" itemprop=\"recipeInstructions\">After it has browned on the second side, using your spatula and chop the fish while on the griddle.  Mix in with the oil and butter and brown bits for extra flavor.  Remove from the heat and allow to rest until you have cooked all of the fish.\r<\/li><div id=\"zlrecipe-instruction-17\" class=\"instruction-label\" >Assemble\r<\/div><li id=\"zlrecipe-instruction-18\" class=\"instruction\" itemprop=\"recipeInstructions\">Spread the tortillas out on a plate and cover with a damp paper towel.  Heat in the microwave for 1 minute.
