{"id":1331,"date":"2011-07-20T20:14:06","date_gmt":"2011-07-21T01:14:06","guid":{"rendered":"http:\/\/foodiecuisine.com\/wordpress\/?p=1331"},"modified":"2011-07-08T20:16:02","modified_gmt":"2011-07-09T01:16:02","slug":"pea-puree-healthy-sauce-for-many-applications","status":"publish","type":"post","link":"http:\/\/foodiecuisine.com\/wordpress\/general\/pea-puree-healthy-sauce-for-many-applications\/","title":{"rendered":"Pea Puree, Healthy Sauce for Many Applications"},"content":{"rendered":"<h4>By Todd Barron @ FoodieCuisine.com<\/h4>\n<div id=\"attachment_1334\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/07\/scallops_pea_puree.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1334\" class=\"size-medium wp-image-1334\" title=\"scallops_pea_puree\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/07\/scallops_pea_puree-300x179.jpg\" alt=\"\" width=\"300\" height=\"179\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/07\/scallops_pea_puree-300x179.jpg 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/07\/scallops_pea_puree.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1334\" class=\"wp-caption-text\">Pea Puree with Scallops<\/p><\/div>\n<p>I made a Pea Puree the other day for dinner and used it as a base for scallops, which I topped with\u00a0chopped pan-fried pancetta pieces.<\/p>\n<p>I\u00a0was inspired\u00a0for the dish from an Episode of <a href=\"http:\/\/www.bravotv.com\/top-chef\/blogs\/tom-colicchio\/the-peas-that-split\">Top Chef <\/a>in Season 7.<\/p>\n<p>In the episode, chef Alex is accused of stealing a pea puree from Chef Ed.\u00a0 The accusation gains ground when we are shown the judges are not in on the drama.\u00a0\u00a0\u00a0After the drama ensues, the issue really rockets into the stratosphere when Alex wins the daily competition due to the judge\u2019s reception of the puree.<\/p>\n<p>Chef Tom Colicchio insits the judges knew nothing of the events behind the scenes, if Alex stole it or not, or in the end who really made it, but it doesn\u2019t matter\u00a0as Alex did not win the competition.<\/p>\n<p>Based on the recalled drama, I decided to make a pea puree and used a recipe\u00a0by Top Chef <a href=\"http:\/\/chefmarksimmons.com\/recipes.htm\">Mark Simmons<\/a>\u00a0from Season 4 of the show.\u00a0 The recipe is simple and as follows:<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 package frozen peas<\/li>\n<li>100 grams of fresh spinach<\/li>\n<li>1 bunch fresh mint<\/li>\n<li>1 bunch fresh basil<\/li>\n<li>1 serrano chili pepper<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Cooking<\/strong><\/p>\n<p>Bring a large pot of salted water to a rolling boil.\u00a0 Add the peas and spinach and cook until tender, about 4 minutes.<\/p>\n<p>Chop the mint, basil, and serrano and add to the cooking liquid for one minute.<\/p>\n<p>Strain the vegetables\u00a0and remove to a bowl.\u00a0 Reserve\u00a02-4 cups of the liquid.<\/p>\n<p>Use your blender (I used my VitaMix) and puree the mixture on high speed for a few minutes, adding the liquid as needed to reach the desired consistency.\u00a0 Depending on how you want to use the sauce, you will end up using more or less.\u00a0 I used about 2 cups for my run here.<\/p>\n<p>Remove the puree to a bowl and place the bowl in an ice bath.\u00a0 I filled a large salad bowl with ice and put the bowl of puree in the middle for an hour.<\/p>\n<p>Once the sauce is cool you can cover and put\u00a0in the refrigerator for later or use it right away.<\/p>\n<p>Uses<\/p>\n<p>The puree is great as a base for fish or vegetables and also can be used in pea soup, pea risotto, or in pasta.\u00a0 I topped mine with pan seared scallops and a few sprinkles of pan-fried pancetta.<\/p>\n<p>The puree\u00a0is very tasty with flavoral aromatics from the mint and basil.\u00a0 The serrano adds just the right amount of heat and best of all, its very low in calories!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>By Todd Barron @ FoodieCuisine.com I made a Pea Puree the other day for dinner and used it as a base for scallops, which I topped with\u00a0chopped pan-fried pancetta pieces.
