class=\"wp-caption-text\">Buffalo Chicken Thighs<\/p><\/div>\n<p>One of the magazines I subscribe to is <a href=\"http:\/\/www.cookinglight.com\/\">Cooking Light<\/a>.\u00a0 They have many great low-calorie recipes and also have a section for meals on a budget.\u00a0 This months issue has a recipe for <a href=\"http:\/\/www.myrecipes.com\/recipe\/buffalo-chicken-thighs-50400000115193\/\">Buffalo Chicken Thighs<\/a> which I had to try out last night.\u00a0 As it turns out, they were very tasty and my family loved them.\u00a0 My younger son even raved about how it was the \u201cbest chicken ever\u201d.\u00a0 You can\u2019t get much better than that. \ud83d\ude42<\/p>\n<p>I already owned the olive oil, flour,\u00a0blue cheese, and butter used for the recipe, but other than that, the entire meal came out to <strong>$11.57<\/strong> at Kroger.\u00a0 It made enough to feed (4) easily with a few\u00a0leftovers.\u00a0 That is an average price of <strong>$2.90 per person<\/strong>.\u00a0 Cheaper than fast food!\u00a0 To top it off, I spent more than called for as I added broccoli to the mix.<\/p>\n<p><strong>Ingredients \u2013 Chicken<\/strong><\/p>\n<ul>\n<li>6 tablespoons all-purpose flour<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1\/2 teaspoon garlic powder<\/li>\n<li>1 teaspoon ground red pepper<\/li>\n<li>5 pounds (8) bone-in chicken thighs, skinned<\/li>\n<li>1 tablespoon olive oil, divided<\/li>\n<li>4\u00a0tablespoons hot sauce<\/li>\n<li>1 tablespoon butter<\/li>\n<\/ul>\n<p><strong>Ingredients \u2013 Blue Cheese Potatoes<\/strong><\/p>\n<ul>\n<li>4 red potatoes (~1.5 pounds)<\/li>\n<li>2 ounces blue cheese<\/li>\n<li>1\/4 cup low-fat buttermilk<\/li>\n<li>1\/4 cup roasted garlic (from deli counter)<\/li>\n<\/ul>\n<p><strong>Prep<\/strong><\/p>\n<p>Wash the potatoes and place in a large pot of water to boil them in.\u00a0 Turn it to high , bring to a boil, and let boil for 15 minutes.\u00a0 Proceed to cook everything else and the potatoes should be ready about the time the chicken goes into the oven.<\/p>\n<p>Remove the skin from the chicken thighs and trim away the fat.\u00a0 In a large bowl, combine the flour, red pepper flakes, salt, and garlic powder.\u00a0 Toss the chicken thighs in the mixture until well coated on all sides.<\/p>\n<p>Trim the stalks off the broccoli, wash it, cut away the florets, and place in a large skillet.\u00a0 Pour enough water to reach 1\u2033and turn to Medium-High.\u00a0 Steam the broccoli for about 10 minutes or until slightly tender (it will continue to cook once out of the skillet.)\u00a0 Drain the broccoli from the pan once it is done and set aside in a bowl.\u00a0 Season with salt and pepper as desired.<\/p>\n<p>Pre-heat the oven to 400 degrees F.<\/p>\n<p><strong>Cooking<\/strong><\/p>\n<p>In a large skillet, heat the olive oil.\u00a0 In batches, shake excess flour off and pan\u00a0fry the chicken thighs on each side for 4 minutes (or until golden brown.)\u00a0 Remove from the skillet and place on a large baking sheet.\u00a0 Place the sheet in the oven once all of the chicken is done.\u00a0 Bake for 8 minutes or until the chicken reaches 160 degrees F in the middle (it will continue to cook after removed from the oven.)\u00a0 Remove from the oven and set aside.<\/p>\n<p>Remove the potatoes from the water and place in a large bowl.\u00a0 Mash the potatoes with a potato masher.\u00a0 Add the blue cheese, buttermilk, and the garlic.\u00a0 Mix well and season with salt and pepper as your taste applies.<\/p>\n<p>Heat the hot sauce and the butter in an oven-proof covered bowl (45 seconds or so.)\u00a0 Mix well until the hot sauce and butter is silky smooth.<\/p>\n<p>Toss the chicken with the hot sauce mixture in a bowl until well coated.\u00a0 Place two chicken thighs on each plate along with a mound of potatoes and
