{"id":1491,"date":"2011-09-27T23:19:35","date_gmt":"2011-09-28T04:19:35","guid":{"rendered":"http:\/\/foodiecuisine.com\/wordpress\/?p=1491"},"modified":"2011-09-27T23:19:35","modified_gmt":"2011-09-28T04:19:35","slug":"healthy-gnocchi-quick-and-tasty","status":"publish","type":"post","link":"http:\/\/foodiecuisine.com\/wordpress\/italian-cuisine\/healthy-gnocchi-quick-and-tasty\/","title":{"rendered":"Healthy Gnocchi, Quick and Tasty"},"content":{"rendered":"<h4>By Todd Barron @ FoodieCuisine.com<\/h4>\n<div id=\"attachment_1493\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/09\/low_fat_gnocchi.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1493\" class=\"size-medium wp-image-1493\" title=\"low_fat_gnocchi\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/09\/low_fat_gnocchi-300x195.jpg\" alt=\"\" width=\"300\" height=\"195\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/09\/low_fat_gnocchi-300x195.jpg 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/09\/low_fat_gnocchi.jpg 787w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1493\" class=\"wp-caption-text\">Healthy Gnocchi<\/p><\/div>\n<p>I made gnocchi tonight and it tasted wonderful (even my 11 year old liked it.)\u00a0 The best part?\u00a0 It was low-calorie and fit into my diet perfectly.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 Package gnocchi (should be <660 calories for the entire box)<\/li>\n<li>1\/2 Red onion<\/li>\n<li>1\/2 Cup roasted garlic (from the deli section)<\/li>\n<li>1\/2 Tablespoon fresh basil, sliced thinly<\/li>\n<li>1\/2 Tablespoon olive oil<\/li>\n<li>1\/2 Tablespoon butter<\/li>\n<li>1 14Ounce can Roasted Tomatoes<\/li>\n<li>1\/2 Tablespoon red wine vinegar<\/li>\n<li>1 14 Ounce can Quartered Artichokes<\/li>\n<li>1\/2 Fresh Jalapeno<\/li>\n<li>Salt, pepper, and red pepper flakes to taste.<\/li>\n<\/ul>\n<p><strong>Cooking<\/strong><\/p>\n<p>Cook the gnocchi according to the directions.<\/p>\n<p>Slice the onion and jalapeno thinly.\u00a0\u00a0Heat the olive oil over high in a skillet, add the onions and jalapeno.<\/p>\n<p>Once the\u00a0onions are translucent, add the quartered artichokes.\u00a0 Let cook for 5 minutes.\u00a0 Season with salt, pepper, and red pepper flakes.<\/p>\n<p>Add the roasted tomatoes and let cook until reduced.\u00a0 Add the red wine vinegar and cook down for 1 minute.<\/p>\n<p>Turn the heat the low.\u00a0 Stir in the sun-dried tomatoes, the garlic, and half of the basil.<\/p>\n<p>Once the gnocchi is cooked, use a slotted spoon to remove it from the boiling water.<\/p>\n<p>Move the gnocchi to the sauce in the skillet.\u00a0 Toss to cover the gnocchi with the sauce.<\/p>\n<p>Serve with fresh basil on top and sprinkle with Parmesan cheese.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>By Todd Barron @ FoodieCuisine.com I made gnocchi tonight and it tasted wonderful (even my 11 year old liked it.)\u00a0 The best part?\u00a0 It was low-calorie and fit into my diet perfectly.
