{"id":1557,"date":"2011-10-26T06:00:44","date_gmt":"2011-10-26T11:00:44","guid":{"rendered":"http:\/\/foodiecuisine.com\/wordpress\/?p=1557"},"modified":"2012-02-20T20:37:26","modified_gmt":"2012-02-21T02:37:26","slug":"sweet-and-savory-cod-recipe","status":"publish","type":"post","link":"http:\/\/foodiecuisine.com\/wordpress\/american-cuisine\/sweet-and-savory-cod-recipe\/","title":{"rendered":"Sweet and Savory Cod Recipe"},"content":{"rendered":"<h4>By Todd Barron @ FoodieCuisine.com<\/h4>\n<div id=\"attachment_1560\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/10\/cod_almonds_raisins.png\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1560\" class=\"size-medium wp-image-1560\" title=\"cod_almonds_raisins\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/10\/cod_almonds_raisins-300x240.png\" alt=\"\" width=\"300\" height=\"240\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/10\/cod_almonds_raisins-300x240.png 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/10\/cod_almonds_raisins.png 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1560\" class=\"wp-caption-text\">Sweet and Savory Cod Filet<\/p><\/div>\n<p>I came up with a sweet and savory fish recipe last night and the family really enjoyed it.\u00a0 I keep the calories down by pan-frying and baking in the oven, instead of deep-frying.<\/p>\n<p>I also rely on sweet raisins and spicy peppers instead of a heavy sauce.\u00a0 It does use butter, but not a lot.\u00a0 Olive oil is used for frying to ensure a healthy fat is used.<\/p>\n<p><strong>Ingredients (4-6 servings)<\/strong><\/p>\n<ul>\n<li>Small package sliced almonds<\/li>\n<li>Small package golden sweet raisins<\/li>\n<li>1 fresno pepper<\/li>\n<li>1\/4 stick butter<\/li>\n<li>1 Tablespoon olive oil<\/li>\n<li>2 pounds cod filets<\/li>\n<li>1 teaspoon cayenne pepper<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>4 large eggs<\/li>\n<li>2 cups flour<\/li>\n<\/ul>\n<p><strong>Prep<\/strong><\/p>\n<p>Heat your griddle to 400 degrees F.<\/p>\n<p>Cut the cod filets into\u00a0manageable pieces (about 3\u2033 long).<\/p>\n<p>Whisk the eggs in a bowl.<\/p>\n<p>Put the flour in another bowl.<\/p>\n<p>Dredge each cod filet through the egg mixture and then through the flour mixture.<\/p>\n<p>Set each battered filet on a wire rack until ready to pan-fry.<\/p>\n<p><strong>Sauce<\/strong><\/p>\n<p>Put the butter in a sauce pan over\u00a0high heat.<\/p>\n<p>Once the butter starts to boil, reduce the heat to low.<\/p>\n<p>Add the raisins and the almonds.<\/p>\n<p>Turn off the heat after 1 minute.<\/p>\n<p><strong>Cooking<\/strong><\/p>\n<p>Heat oven to 425 degrees F.<\/p>\n<p>Place cookie sheet in oven to warm.<\/p>\n<p>Drizzle olive oil over the hot griddle.<\/p>\n<p>Place cod filets over the griddle and pan-fry on each side until golden brown (about 3 minutes per side)<\/p>\n<p>Remove filets from grill and place on\u00a0heated cookie sheet.<\/p>\n<p>Spoon almond\/raisin mixture over the top of each filet.<\/p>\n<p>Remove seeds from pepper and finely chop.\u00a0 Sprinkle over the filets.<\/p>\n<p>Place sheet in oven.<\/p>\n<p>Cook until filets are 155 degrees F in the center (or desired doneness).\u00a0 About 15 minutes.<\/p>\n<p>Remove from oven.<\/p>\n<p><strong>Plating<\/strong><\/p>\n<p>Place one filet on each plate and serve!<\/p>\n<p>Note: I served steamed broccoli with mine.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n","protected":false},"excerpt":{"rendered":"<p>By Todd Barron @ FoodieCuisine.com I came up with a sweet and savory fish recipe last night and the family really enjoyed it.\u00a0 I keep the calories down by pan-frying and baking in the oven, instead of deep-frying.
