class=\"wp-caption-text\">Grilled Chicken Thighs<\/p><\/div>\n<p>I marinated chicken the other night and prepared it with a side of fresh spinach.<\/p>\n<p>It is amazing how flavorful chicken thighs can be when marinated properly and also healthy if you trim the fat.<\/p>\n<p>Everyone enjoyed the dinner and my wife and son both went back for seconds!<\/p>\n<p><em>Note: I also cooked roasted potatoes but will post how to make them in another follow up recipe.<\/em><\/p>\n<p><strong>Ingredients (Makes enough for 4-6 people)<\/strong><\/p>\n<ul>\n<li>2 pounds boneless skinless chicken thighs<\/li>\n<li>1 bag fresh spinach (about 1 pound)<\/li>\n<li>5\u00a0tablespoons olive oil<\/li>\n<li>1 tablespoon crushed red pepper<\/li>\n<li>1 tablespoon rosemary<\/li>\n<li>2 teaspoons garlic salt<\/li>\n<li>1 teaspoon black pepper<\/li>\n<li>1 teaspoon cayenne pepper<\/li>\n<\/ul>\n<p><strong>Prep<\/strong><\/p>\n<p>Trim the fat from each chicken thigh.<\/p>\n<p>Add the chicken thighs to a large plastic bag (ziplock).<\/p>\n<p>Add 4 tablespoons of the olive oil and all of the following: red pepper, rosemary, garlic salt, black pepper, and cayenne pepper to the bag.<\/p>\n<p>Close the bag while pressing the air out of it.<\/p>\n<p>Thoroughly knead the bag, moving the chicken parts around to completely coat each one and to spread the ingredients around.<\/p>\n<p>Marinate in the refrigerator for 24 hours.<\/p>\n<p><strong>Cooking \u2013 Chicken<\/strong><\/p>\n<div id=\"attachment_1569\" style=\"width: 310px\" class=\"wp-caption alignleft\"><a class=\"size-medium wp-image-1569\" title=\"chicken_in_pan\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2011\/11\/chicken_in_pan-300x203.jpg\" alt=\"\" width=\"300\" class=\"wp-caption-text\">Pan fried first and finished in the oven<\/p><\/div>\n<p>Remove the chicken from the refrigerator and let warm to close to room temperature.<\/p>\n<p>Bring a large pot of water to a boil.<\/p>\n<p>Turn the oven on to 450 degrees F.<\/p>\n<p>Turn a large skillet on high and add 1 tablespoon of olive oil to the pan.<\/p>\n<p>Cook the chicken thighs in a single layer, in batches, in the pan.\u00a0 Only turn once and only after they are brown on the side you are turning from.\u00a0 This should take no more than a couple of minutes as you will finish cooking the thighs in the oven.\u00a0 You are only looking to brown them in this step.<\/p>\n<p>Remove each chicken thigh once browned on both sides to a cookie sheet (in a single layer.)<\/p>\n<p>Once all of the chicken is browned, place the cookie sheet in the oven and cook until it reaches 165 degrees F.\u00a0 This should take about 10-15 minutes.<\/p>\n<p>When the chicken is done, remove it from the oven and cover with foil.<\/p>\n<p><strong>Cooking \u2013 Spinach<\/strong><\/p>\n<p>Add the fresh spinach (washed,) to the pot of boiling water and boil for 1 minute.<\/p>\n<p>Use a slotted spoon and remove the spinach to a colander.<\/p>\n<p>Press down on the spinach to release all liquid.<\/p>\n<p><strong>Plating<\/strong><\/p>\n<p>Arrange a single chicken thigh on each plate along with a mound of spinach.<\/p>\n<p>Drizzle fresh lemon juice over each chicken thigh.<\/p>\n<p>Sprinkle salt, pepper, and red wine vinegar over the spinach.<\/p>\n<p>Drizzle aged balsamic vinegar over the chicken
