{"id":1685,"date":"2012-01-23T05:00:35","date_gmt":"2012-01-23T11:00:35","guid":{"rendered":"http:\/\/foodiecuisine.com\/wordpress\/?p=1685"},"modified":"2012-02-01T07:55:25","modified_gmt":"2012-02-01T13:55:25","slug":"korean-lettuce-wraps-recipe","status":"publish","type":"post","link":"http:\/\/foodiecuisine.com\/wordpress\/low-calorie-food-healthy\/korean-lettuce-wraps-recipe\/","title":{"rendered":"Korean Lettuce Wraps Recipe"},"content":{"rendered":"<h4>By Todd Barron @ FoodieCuisine.com<\/h4>\n<div id=\"attachment_1689\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/01\/korean_lettuce_wrap.png\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1689\" class=\"size-medium wp-image-1689\" title=\"Lettuce Wrap\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/01\/korean_lettuce_wrap-300x192.png\" alt=\"\" width=\"300\" height=\"192\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/01\/korean_lettuce_wrap-300x192.png 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/01\/korean_lettuce_wrap.png 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1689\" class=\"wp-caption-text\">Lettuce Wrap<\/p><\/div>\n<p>I made a quick and simple dinner the other night that had lots of flavor but very few calories.\u00a0 It was so good my wife had it again the next night, which is a rare occasion since she rarely eats leftovers.<\/p>\n<p>The meal consists of chicken, vegetables, and a <a href=\"http:\/\/www.jayone.com\/en\/products\/show\/845\">Korean BBQ <\/a>sauce, all wrapped in lettuce.\u00a0 By wrapping\u00a0the chicken in\u00a0lettuce, you experience tacos but without the calories in tortillas.<\/p>\n<p>Ingredients (Makes 8 Wraps)<\/p>\n<ul>\n<li>2 pounds chicken thighs<\/li>\n<li>2\u00a0fresh yellow\u00a0squash<\/li>\n<li>1\/2 white onion<\/li>\n<li>Korean BBQ sauce (I used Spicy <a href=\"http:\/\/www.jayone.com\/en\/products\/show\/845\">Bulgogi Korean BBQ Sauce from JayOne<\/a>)<\/li>\n<li>1\u2033\u00a0piece fresh ginger<\/li>\n<li>1 jalapeno<\/li>\n<li>1 Tablespoon vegetable oil<\/li>\n<li>1 head butter lettuce<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><strong>Prep<\/strong><\/p>\n<p>Trim the chicken thighs of any fat and dice.\u00a0 Wash and dice the onion and squash.\u00a0 Wash, peel, and finely dice the giner and jalapeno.<\/p>\n<p><strong>Cooking<\/strong><\/p>\n<p>Heat the oil on High in a large skillet until it starts to smoke.<\/p>\n<p>Carefully add in the chicken and let brown.<\/p>\n<p>Use a spatula to turn it while browning.<\/p>\n<p>Once it is browned on all sides, add the Korean BBQ sauce (about 3 Tablespoons worth.)<\/p>\n<p>Cook for 2-3 minutes and add all of the vegetables.<\/p>\n<p>Continue to cook until the onions are translucent and the squash is softened (about 10 minutes.)<\/p>\n<p>Add salt and pepper and remove from the heat.<\/p>\n<p><strong>Putting it Together<\/strong><\/p>\n<p>Place two complete leaves of lettuce on a plate and place\u00a03 tablespoons of the chicken mixture in the middle.\u00a0 Roll together like a burrito and serve.\u00a0 Each person will usually eat 2-3 wraps.\u00a0 Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>By Todd Barron @ FoodieCuisine.com I made a quick and simple dinner the other night that had lots of flavor but very few calories.\u00a0 It was so good my wife had it again the next night, which is a rare occasion since she rarely eats leftovers.
