{"id":2239,"date":"2012-11-11T09:14:06","date_gmt":"2012-11-11T15:14:06","guid":{"rendered":"http:\/\/foodiecuisine.com\/wordpress\/?p=2239"},"modified":"2012-11-11T09:14:56","modified_gmt":"2012-11-11T15:14:56","slug":"scallops-with-apple-salsa-recipe","status":"publish","type":"post","link":"http:\/\/foodiecuisine.com\/wordpress\/low-calorie-food-healthy\/scallops-with-apple-salsa-recipe\/","title":{"rendered":"Scallops with Apple Salsa Recipe"},"content":{"rendered":"<h4>By Todd Barron @ FoodieCuisine.com<\/h4>\n<div id=\"attachment_2241\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/11\/615403_465403220165553_1159284770_o.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2241\" class=\"size-medium wp-image-2241\" title=\"Scallops with Apple Salsa\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/11\/615403_465403220165553_1159284770_o-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/11\/615403_465403220165553_1159284770_o-300x225.jpg 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/11\/615403_465403220165553_1159284770_o-1024x768.jpg 1024w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2012\/11\/615403_465403220165553_1159284770_o.jpg 2048w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-2241\" class=\"wp-caption-text\">Scallops with Apple Salsa<\/p><\/div>\n<p>For watching football I like to cook healthy items, and some unhealthy ones, so recently I tried my hand at scallops with an apple salsa.\u00a0 The apples provided the tartness while the natural sweetness of the scallops helped bring everything together.\u00a0 I really enjoyed it and believe you will to!<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 pound fresh sea scallops<\/li>\n<li>1 lemon<\/li>\n<li>1 tablespoon white vinegar<\/li>\n<li>1 teaspoon Cajun spice (or Rock City Smokehouse Spice Blend)<\/li>\n<li>1 tablespoon butter<\/li>\n<li>1 tablespoon cilantro<\/li>\n<li>1 granny smith apple<\/li>\n<li>1\/2 small red onion<\/li>\n<\/ul>\n<p><strong>Salsa<\/strong><\/p>\n<ul>\n<li>Dust both sides of the scallops with the spice blend<\/li>\n<li>Dice the apple into small chunks<\/li>\n<li>Finely dice the onion<\/li>\n<li>Heat half of the butter in a large skillet on high until it starts to brown<\/li>\n<li>Add the onion and apple to the skillet<\/li>\n<li>After the onion has turned translucent and the apples start to brown, add the vinegar (about 5 minutes)<\/li>\n<li>Turn down heat to low<\/li>\n<li>Cook for 2-3 minutes until caramelized and remove to a bowl<\/li>\n<\/ul>\n<p><strong>Scallops<\/strong><\/p>\n<ul>\n<li>Turn the heat back to high and add the remaining butter<\/li>\n<li>Once the butter starts to brown, add the scallops to the pan<\/li>\n<li>DO NOT TURN until they brown on the bottom and freely give from the pan (about 3 minutes, depends on heat and metal being used)<\/li>\n<li>Turn once, let brown on the other side, and remove from heat<\/li>\n<li>Place on a warm plate and top with the salsa<\/li>\n<li>Garnish with chopped cilantro<\/li>\n<\/ul>\n<p>Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>By Todd Barron @ FoodieCuisine.com For watching football I like to cook healthy items, and some unhealthy ones, so recently I tried my hand at scallops with an apple salsa.\u00a0 The apples provided the tartness while the natural sweetness of the scallops helped bring everything together.\u00a0 I really enjoyed it and believe you will to!
