class=\"wp-caption-text\">Blackened Grouper with Crab<\/p><\/div>\n<p><strong>Ingredients (makes 1 serving, multiply to make more)<\/strong><\/p>\n<ul>\n<li>8 ounce grouper filet<\/li>\n<li>8 ounces jumbo lump crab meat<\/li>\n<li>1 ounce of red bell peppers in water<\/li>\n<li>1 lemon<\/li>\n<li>1 tbs Cajun seasoning<\/li>\n<li>Cooking spray<\/li>\n<li>4 small carrots<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li>Spray the carrots with cooking spray and lightly season with salt and pepper<\/li>\n<li>Put carrots on cookie sheet<\/li>\n<li>Heat oven to 425F<\/li>\n<li>Coat the grouper with the Cajun spice<\/li>\n<li>Thinly slice the red bell peppers<\/li>\n<li>Drain the crab meat<\/li>\n<li>Slice the lemon<\/li>\n<\/ul>\n<p><strong>Carrots<\/strong><\/p>\n<ul>\n<li>Bake the carrots for 25 minutes or until slightly tender<\/li>\n<li>Remove from oven to cool<\/li>\n<li>Cover with foil<\/li>\n<\/ul>\n<p><strong>Fish<\/strong><\/p>\n<ul>\n<li>Heat a large non-stick skillet to medium high<\/li>\n<li>Spray with cooking spray<\/li>\n<li>Pan fry the grouper and ensure it is completely touching the surface of the pan<\/li>\n<li>Turn only once, after about 5 minutes<\/li>\n<li>Cook until temp reads 145F in the center, before fish starts to fall apart but is not translucent<\/li>\n<\/ul>\n<p><strong>Putting it all together<\/strong><\/p>\n<ul>\n<li>Place a fish filet in the center of the plate<\/li>\n<li>Top with the crab meat<\/li>\n<li>Top with the red bell
