id=\"caption-attachment-2969\" class=\"wp-caption-text\">Healthy Chicken Parmesan<\/p><\/div>\n<p>You don\u2019t normally think \u201chealthy\u201d when you think of Chicken Parmesan but I\u2019ve come up with a deviation that tastes good AND is good for you!\u00a0 Start to finish I cooked the entire dish in 20 minutes.\u00a0 And yes, there is no Parmesan cheese but you could add a little if you really miss it!<\/p>\n<p><strong>Ingredients (makes 1 serving)<\/strong><\/p>\n<ul>\n<li>1 5 ounce chicken breast<\/li>\n<li>1 regular can original Rotel (or diced tomatoes if you don\u2019t like spicy food)<\/li>\n<li>1\/4 cup low-fat mozzarella cheese (shredded)<\/li>\n<li>salt and pepper to taste<\/li>\n<li>Cooking spray<\/li>\n<li>Fresh basil (4 leaves)<\/li>\n<li>1 clove garlic<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li>Put the chicken breast in a large plastic bag and pound it with a mallet until thin<\/li>\n<li>Spray cookie sheet with cooking spray<\/li>\n<li>Remove from the bag and place on the cookie sheet<\/li>\n<\/ul>\n<p><strong>Cooking<\/strong><\/p>\n<ul>\n<li>Bake at 400 degrees F (convection if you have it) for 6 minutes<\/li>\n<li>Finely dice the garlic<\/li>\n<li>Remove from oven and top with the tomatoes and cheese<\/li>\n<li>Sprinkle the garlic over the top<\/li>\n<li>Shred basil and sprinkle on top, reserve one leaf<\/li>\n<li>Place back in oven and back for another 6-8 minutes until the thickest part reads 145 F<\/li>\n<li>Remove from oven<\/li>\n<li>Top with the remaining basil leaf<\/li>\n<li>Let sit for 5 minutes and serve<\/li>\n<\/ul>\n<p><strong>Nutrition<\/strong><\/p>\n<ul>\n<li>289 calories<\/li>\n<li>11 grams carbohydrates<\/li>\n<li>6 grams fat<\/li>\n<li>42 grams
