{"id":469,"date":"2010-05-26T07:50:20","date_gmt":"2010-05-26T12:50:20","guid":{"rendered":"http:\/\/foodiecuisine.com\/wordpress\/?p=469"},"modified":"2010-05-26T07:50:20","modified_gmt":"2010-05-26T12:50:20","slug":"pollo-diablo-garlicky-spicy-deep-fried-chicken","status":"publish","type":"post","link":"http:\/\/foodiecuisine.com\/wordpress\/general\/pollo-diablo-garlicky-spicy-deep-fried-chicken\/","title":{"rendered":"Pollo Diablo &#8211; (Garlicky, Spicy, Deep-fried Chicken)"},"content":{"rendered":"<h4>By Todd Barron @ FoodieCuisine.com<\/h4>\n<div id=\"attachment_478\" style=\"width: 295px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2622.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-478\" class=\"size-full wp-image-478   \" title=\"Garlic Chicken - Plated\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2622.jpg\" alt=\"\" width=\"285\" height=\"222\" \/><\/a><p id=\"caption-attachment-478\" class=\"wp-caption-text\">Pollo Diablo - My finished test<\/p><\/div>\n<p>One of my favorite hole in the wall restaurants, or \u201cdives\u201d as they are called, is <a href=\"http:\/\/www.foodnetwork.com\/diners-drive-ins-and-dives\/a-world-of-flavors\/index.html\">Chino Bandito\u2019s<\/a> in Phoenix, Arizona.\u00a0 As luck woud have it, Guy Fieri covered the restaurant on an espisode of <a href=\"http:\/\/www.foodnetwork.com\/diners-drive-ins-and-dives\/a-world-of-flavors\/index.html\">Diner\u2019s, Drive-Ins, and Dives<\/a> and published Chino Bandito\u2019s recipe for Pollo Diablo (their garlic chicken)!\u00a0 I sat on the information for a few weeks but gave it a try the other day.\u00a0 Read more for the results and to try it at home.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>12 cups corn oil<br \/>\n3\/4 cup egg whites<br \/>\n4 pounds\u00a0skinless, boneless, chicken thighs<br \/>\n2 Tbs garlic salt<br \/>\nFreshly ground black pepper<br \/>\n3 cups cornstarch<\/p>\n<h3>Garlic Mixture Ingredients<\/h3>\n<p>4 tablespoons minced garlic<br \/>\n1 teaspoon minced yellow onion<br \/>\n3\/4 tablespoon minced green onion<br \/>\nPinch dried crushed red pepper<br \/>\n1\/2 minced serrano pepper<br \/>\n1\/2 minced jalapeno pepper<br \/>\nPinch garlic powder<br \/>\n1\/4 cup hot chili oil, divided<br \/>\n2 tablespoons sesame oil, divided<br \/>\n2 cups freshly chopped green onions<\/p>\n<div id=\"attachment_473\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2616.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-473\" class=\"size-medium wp-image-473  \" title=\"Garlic Chicken - Chopped Chicken\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2616-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2616-300x200.jpg 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2616.jpg 400w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-473\" class=\"wp-caption-text\">Garlic Chicken - Prepped and Set<\/p><\/div>\n<h3>Directions<\/h3>\n<p>In a <a href=\"http:\/\/rcm.amazon.com\/e\/cm?lt1=_blank&bc1=000000&IS2=1&bg1=FFFFFF&fc1=000000&lc1=0000FF&t=lostlogicinc&o=1&p=8&l=as1&m=amazon&f=ifr&md=10FE9736YVPPT7A0FBG2&asins=B000VYDOQ2\">Dutch oven<\/a> heat oil to 375 degrees F.\u00a0\u00a0 I recommend using a candy thermometer inserted into the oil to ensure it reaches 375 degrees F.<\/p>\n<p>While the oil is heating you need to cut the chicken into 1\/2 inch pieces and remove any excess fat during the process.<\/p>\n<p>In a medium bowl, beat the egg whites with a handheld mixer until frothy.\u00a0 Place the chicken pieces into the egg whites, mixing until each piece is covered.\u00a0 Sprinkle with a pinch each of garlic salt and freshly ground black pepper and stir to distribute.<\/p>\n<p>In my picture on the right you can see the chopped chicken, bowl of egg whites, and bowl of corn starch.\u00a0 Make sure you have a large area to work with as the next step can be messy!<\/p>\n<p>Dredge the chicken pieces in cornstarch, draining most of the egg white from chicken by picking up a handful and allowing the egg white to drain while moving to the cornstarch. Cover the pieces completely by turning in corn starch.<\/p>\n<p>Pick up the chicken in handfuls and transfer from hand to hand to shake off most of the starch.\u00a0\u00a0Place pieces of chicken in hot oil and fry until light brown, about 5 to 7 minutes.<\/p>\n<div id=\"attachment_476\" style=\"width: 310px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2620.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-476\" class=\"size-medium wp-image-476 \" title=\"Garlic Chicken - Chicken Pieces Fried\" src=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2620-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2620-300x200.jpg 300w, http:\/\/foodiecuisine.com\/wordpress\/wp-content\/uploads\/2010\/05\/sIMG_2620.jpg 400w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-476\" class=\"wp-caption-text\">Garlic Chicken - Chicken Pieces Fried<\/p><\/div>\n<h3>For the Garlic Mixture<\/h3>\n<p>The following steps are for the mixture you will mix in with the fried chicken.\u00a0<\/p>\n<p>In a small bowl, add all the garlic mixture ingredients and toss to thoroughly combine.<\/p>\n<p>Place 1 tablespoon of hot chili oil and 1 teaspoon of sesame oil into a hot wok or saute pan over medium to high heat.<\/p>\n<p>Immediately put 4 tablespoons of the garlic mixture and 1\/3 cup chopped green onions into the oil, stirring with a spoon to lightly cook the garlic mixture, being careful not to brown.<\/p>\n<p>Add approximately 2 cups of the fried chicken and toss to cover with the sauce. Finish them with a pinch of garlic salt.<\/p>\n<p>Toss once more and serve.
