Jambalaya.\u00a0 My wife said it would go perfectly with the Saints playing football at the time (versus the Vikings) so there you have it. \ud83d\ude42<\/p>\n<div id=\"attachment_726\" style=\"width: class=\"wp-caption-text\">Jambalaya<\/p><\/div>\n<p>I decided to go with a low-cal version of the dish since it is a weekday.\u00a0 For those of you who don\u2019t know how my diet has worked for the past 8 months\u2026.I only eat low-cal and low-fat foods during the week and allow myself to eat up to three meals on the weekend containing whatever I want.\u00a0 As long as I make my goal weight by Friday, I\u2019m free to indulge.\u00a0 That\u2019s how I can do all these food reviews and not gain a pound.<\/p>\n<p>Crawfish tails are low-calorie as is with only 70 calories per 3 ounces.\u00a0 I bought a frozen package containing 12 ounces for the dish (210 total calories).\u00a0<\/p>\n<p>Sausage has\u00a0a ton of calories and fat in it normally but I chose turkey breakfast sausage instead of the usual pork sausage.\u00a0 The turkey breakfast links had 720 calories for the entire package and I only used half of the package for the dish (total of 360 calories.)<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>Vegetable Mix<\/strong><\/p>\n<ul>\n<li>3 Bell Peppers (Red, Yellow, Green)<\/li>\n<li>2 Jalapeno peppers<\/li>\n<li>2 Tablespoons butter<\/li>\n<li>1 Red onion<\/li>\n<li>5 Cloves garlic<\/li>\n<li>1 Cup Chicken Broth<\/li>\n<li>16 Ounces San Marzano Diced Tomatoes<\/li>\n<li>1 Teaspoon Harissa<\/li>\n<li>2 Tablespoons Paprika<\/li>\n<li>1 Teaspoon Cayenne Pepper<\/li>\n<li>2\u00a0Teaspoons Salt<\/li>\n<li>2\u00a0Teaspoons Ground Black Pepper<\/li>\n<li>1 Teaspoon Cumin Seeds<\/li>\n<\/ul>\n<p><strong>Crawfish and Sausage<\/strong><\/p>\n<ul>\n<li>1 Tablespoon Vegetable Oil<\/li>\n<li>12 ounces crawfish tails<\/li>\n<li>2 Teaspoons flour<\/li>\n<li>6 Turkey Breakfast Sausage Links<\/li>\n<\/ul>\n<p><strong>Finishing<\/strong><\/p>\n<ul>\n<li>2 Cups Cooked Jasmine Rice<\/li>\n<li>1 Bunch green onions<\/li>\n<li>2 Tomatoes<\/li>\n<li>1 Tablespoon Fish Sauce<\/li>\n<\/ul>\n<p>Seed and dice the bell and jalapeno peppers.\u00a0 Dice the red onion, green onions, and the whole\u00a0tomatoes.\u00a0 Finely dice the garlic.<\/p>\n<p>Melt the butter on high in a dutch oven (such as the one I have in tools of the trade.)\u00a0 Add the bell peppers, jalapeno peppers, and red onion to the pot.\u00a0 Cook until soft (about 5 minutes.)\u00a0 Add the garlic.\u00a0 Cook for another 5 minutes until all ingredients are integrated and fragrant.\u00a0<\/p>\n<p>Add the chicken broth and cook for 10 minutes, stiring.\u00a0 Add all of the spices and stir to incorporate.\u00a0 Add the tomatoes, stir, and cover.\u00a0 Cook for 30-45 minutes, stir to prevent burning.<\/p>\n<p>While the vegetable mix is cooking, thaw and drain the crawfish tails.\u00a0 Heat half of the\u00a0oil in a skillet on high and add the crawfish tails.\u00a0 Cook for 3 minutes.\u00a0 Stir in the flour and incorporate completely.\u00a0 Add mixture to the dutch oven and mix to integrate.<\/p>\n<p>Heat the rest of the oil in the skillet on high and add the turkey sausage.\u00a0 Cook for 10 minutes and turn to keep from burning.\u00a0 Sausage should be well browned.\u00a0 Remove from the skillet and cut into 1\/4 inch\u00a0pieces.\u00a0 Place sausage in dutch oven and incorporate with mix.\u00a0 Re-cover and continue cooking.<\/p>\n<p>Cook the mix until reduced and \u201cthick\u201d.\u00a0 It\u2019s hard to say how long given the temperature ranges and size of the pot, just to say that you need to cook it until reduced.\u00a0 Normally this won\u2019t take more than 30-45 minutes.<\/p>\n<p>Cook the rice while you wait and when the mix is thick, turn off the heat and add in the rice and fish sauce.\u00a0 Add in the chopped tomatoes and stir completely.\u00a0
