that is low in calories but filling, to make during the week.\u00a0 I\u2019ve maintained a healthy BMI (and have not gained a pound)\u00a0for almost a year now and want to keep it that way!\u00a0 One thing my wife loves are the bean burritos I make.\u00a0 You may initially think that bean burritos have a lot of fat in them but that\u2019s not true if you make them \u201cproperly.\u201d<\/p>\n<p>There are a few key things to do when making low-calorie bean burritos.\u00a0 The first is to use <strong>Fat-Free Refried Beans<\/strong>.\u00a0 They are available\u00a0in just about every grocery store in the Mexican section right next to the regular Refried Beans.\u00a0 I like the lime flavored ones if you can get them.\u00a0<\/p>\n<p>The next thing to do is to use <strong>Low-Carb Flour Tortillas<\/strong>.\u00a0 Read the package and look for ones that are of Burrito Size (~70g)\u00a0but have very few grams of fat and several grams of fiber.\u00a0 For example, the ones I used the other night have 173 calories each, with 1.5 grams of fat, and 5 grams of fiber each.\u00a0\u00a0You may notice that I don\u2019t list the carbs and that\u2019s because it doesn\u2019t matter.\u00a0 The low-carb ones just happen to have the lowest fat and highest fiber.\u00a0 Be careful on this step as some tortillas have over 10 grams of fat each and 0 grams of\u00a0fiber!\u00a0 The interesting thing\u00a0here is that they\u00a0don\u2019t taste much different from one another.\u00a0 The only difference is that you\u00a0may be\u00a0eating empty calories and fat by not paying attention.\u00a0<\/p>\n<p><strong>Burrito Ingredients \u2013 Makes Six<\/strong><\/p>\n<ul>\n<li>6 Low-Carb Flour Tortillas (Burrito Size, I used Ole brand)<\/li>\n<li>2 Large cans of Refried Beans<\/li>\n<li>1 Small can sliced black olives<\/li>\n<li>1 Whole Jalapeno<\/li>\n<li>1 Bunch Green onions<\/li>\n<li>1 Small Tomato<\/li>\n<li>1 Small Red Onion<\/li>\n<li>1 Small Can Salsa (I used Herdez\u2019s Salas Ranchera, 7oz)<\/li>\n<\/ul>\n<p><strong>Sauce \u2013 Optional<\/strong><\/p>\n<ul>\n<li>4 Limes<\/li>\n<li>1 Avacado<\/li>\n<li>1\/2 Cup\u00a0Olive Oil<\/li>\n<li>1 Bunch Cilantro<\/li>\n<li>Salt and Pepper to taste<\/li>\n<\/ul>\n<p><strong>The Sauce<br \/>\n<\/strong><em>You may remember this from another post!<\/em><\/p>\n<p>Peel and core the avocado and put in the blender.\u00a0 It does not have to be sliced.\u00a0 Pour the Olive Oil into the blender.\u00a0 Squeeze the juice from 2 of the limes into the blender.<\/p>\n<p>Blend the mixture on high for 3 minutes.\u00a0 I use my trusty <a href=\"http:\/\/www.amazon.com\/dp\/B000RRKQKA?tag=lostlogicinc&camp=213381&creative=390973&linkCode\">Vitamix blender<\/a> for this step as it turns things silky smooth.\u00a0 Salt and pepper to taste and blend again until the spices are incorporated.\u00a0 Pour the mixture into a sauce bottle or a bowl that you can spoon from later.<\/p>\n<p><strong>The Burritos<\/strong><\/p>\n<p>Scoop 1\/3 of the beans out of the can and place in middle of the tortilla.\u00a0 Roll it up, folding the sides, and form a burrito.\u00a0 Place it seam side down in a greased baking dish.<\/p>\n<p>Once all 6 burritos are formed, place them in a 375 degree oven for 15 minutes.\u00a0 All you are doing is heating them up.<\/p>\n<p><strong>The Condiments<\/strong><\/p>\n<p>Core and slice the jalapeno.\u00a0 Dice the tomato.\u00a0 Finely chop the green onions.\u00a0 Drain the black olives.\u00a0 Finely dice the red onion.<\/p>\n<p><strong>Putting it all Together<\/strong><\/p>\n<p>Remove the burritos from the oven.\u00a0 Drizzle the sauce over each plate.\u00a0 Top the sauce with the burritos.\u00a0 Drizzle the salsa liberally over each burrito.\u00a0 Sprinkle the burritos with the black olives, jalapenos, red onions, and tomatoes.<\/p>\n<p>Serve and
